Balsamic Vinegar of Modena PGI is only produced from Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana and Montuni grape; must and aged in oak barrels. Once aged, the vinegar undergoes rigorous testing by a group of expert technicians and professional tasters. Only after passing these tests can the product be certified as Balsamic Vinegar of Modena PGI.
Our product range includes Traditional Balsamic Vinegar of Modena PDO, aged for many years in small barrels made from different types of wood, but also younger Balsamic Vinegar of Modena PGI, which is only aged for a few years. Why not try them both to see the difference in aroma and flavour?
