All truffles are sold by WEIGHT and supplied WASHED, unless otherwise requested by the customer. Every truffle is weighed and analysed by examining its fragrance, texture, colour and maturation level. Based on these characteristics, we classify truffles as follows:
- For Cooking: a variety of small or large truffles with cracks, cuts or holes in the gleba that only affect the truffle’s appearance, rather than its quality.
- First Choice: truffles with an irregular shape that in some cases feature small imperfections on the gleba and the peridium, which gives each of them a distinct character. Their weight ranges from over 10 grams to 99 grams.
- Extra: whole, very regular, round truffles. This is how we classify truffles between 30 and 99 grams.
- King size: truffles weighing over 100 grams, which often have an irregular shape. Impressive-looking edible sculptures that should be savoured with the eyes before consumption.
Since truffles are made up of around 80% water, in order to slow down their activity it is recommended to store them at a controlled temperature of +2°C/+4°C, ideally in a ventilated refrigerator.
Rice is not suitable as a storage method because the starch rapidly removes the truffle’s moisture, completely drying it out. It is therefore advisable to use paper towels to wrap or display it. It is important to ensure that the paper is always dry so that it can trap and absorb moisture from the truffle, preventing the formation of mould. A cotton cloth can be used as an alternative to a paper towel. In order to reduce weight loss, it is recommended to close it inside an airtight container or cover it with a glass bell, while always keeping it in the refrigerator.
Truffles’ shelf life greatly depends on the type (the “black” family are more resistant than the white and bianchetto truffles), weight and seasonality.
A truffle must have 3 characteristics to be defined of good quality:
- Perfume: truffle’s rich, well-balanced aroma varies according to the species.
If a truffle lacks fragrance, it is not a defect, but a result of insufficient maturation of the carpophore. - Compactness: it should feel solid, but not rubbery.
- Colour: bright and vibrant.
