Our Dried Porcini Mushrooms Special Quality are carefully selected to offer the best-quality cap and stem slices. This essential product in any pantry only needs to be rehydrated for 20 minutes to provide all the quality and flavour of fresh porcini mushrooms.

To make the most of this product, we recommend cooking a classic Risotto con Funghi Porcini (Risotto with Porcini Mushrooms). Soften the mushrooms in water for 20 minutes. Cut an onion and sauté it in a pan with olive oil. Once they are rehydrated, squeeze out the mushrooms and put them in the pan. Let them cook for a few minutes and then pour in the rice. Simmer with white wine until reduced and cook the rice, gradually adding the water used for the mushrooms (remember to sieve it), followed by the stock. Once cooked, stir in some butter and parmesan.
As a substitute for Fresh Mushrooms, dried mushrooms are certainly a good and fast alternative. A few tips:
- Soak the dried mushrooms in warm water for 20 minutes before use. Then rinse them under running water and squeeze them out.
- Store the remaining liquid for use in cooking.
- Use 10–15 g of dried mushrooms per serving.
