Divide dough mass into 4 equal balls. Gently spread each ball on a 20 cm diameter pizza baking pan. Allow to rest for 20 minutes in a warm place. Bake in a hot oven at 180°C for 12 minutes.
Meanwhile, dice mozzarella and let it to dry on paper towel. Spread mozzarella dices on the partly-baked pizza, add small chunks of gorgonzola cheese and pancetta slices.
Return the partly-baked pizza into the oven and bake at 200°C for 4-5 minutes. Finish off with a drizzle of truffle honey, a twist of pepper and some fresh thyme and rosemary leaves.
